Being stuck in the house on a snow day means I try to cook EVERYTHING I can get my hands on. I will say though, staying in will yield some pretty creative yummy meals.
This week has been one for the books. I’ve made Spicy Shrimp Spaghetti, Lobster Chili, Shrimp Scampi Pizza with 2 ingredient dough and now yummy Meatballs with Lemon Garlic Linguine!
I hope you like this meatball recipe, I was winging it with what I had left over in the fridge.
Side Note: Its definitely time to go grocery shopping.
You will need the following ingredients:
– 1lb of ground beef (or do a mix of ground beef and turkey)
– 1 egg
– 1 tablespoon of plain Greek yogurt
– 2 pieces of bread (used the good processor to grind them)
– 2 to 3 cloves of garlic (minced)
– salt & pepper to taste
– ½ tablespoon Basil
– ½ tablespoon Parsley
– 3 tablespoons butter
In a large bowl combine all ingredients except butter.
Once all ingredients are incorporated, using a spoon, spoon out mixture to make small sized meatballs.
Once all the balls are rolled, set aside and melt the butter in a pan in medium heat.
Place half the balls in the pan and brown on all side. Continue to cook the meatballs, slightly rolling them in the pan until full cooked. About 6 to 8 minutes.
I was able to make 18 meatballs. Depending on the thickness, you may have to cook them longer. To check, cut one meatball in half to make sure it is cooked all the way through.
Serve with your favorite pasta and sauce or alone with a dipping sauce and Enjoy!
