Vanilla Cream Pancakes
Pancakes are a breakfast favorite in my house!
I mean you can make them so many ways and use a ton of fun things to garnish, top and fill them!
However, this past weekend, I was missing 1 key ingredient – MILK! I don’t even know how I let myself run out of milk because its one of the things I keep in the house all the time. *major sad face*
Anyway, all I had in the fridge were 2 pints of Heavy Cream. I had them left over from my holiday dishes and that yummy Eggnog I made.
I was too lazy to actually leave out, partially because it was so cold outside. However, when I’m in a pinch, I get creative. I figured whipping would be good enough to make some pancakes too – dense, but none-the-less, it could work?! Right?
Well it did!
My daughter said, “Mom, you should really call these pound cake pancakes because that’s what they taste like!”
You will need the following ingredients:
– 4 eggs, separated into 2 bowls
– 2 cups flour
– 1 tablespoon baking powder
– 1 teaspoons salt
– 2 tablespoons sugar
– 2 cups heavy cream
– 4 tablespoons butter
– 2 teaspoons vanilla extract
– powdered sugar
First you want to mix together the heavy cream, butter, and egg yolks.
Next add in sugar, salt, baking powder and extract. Mix well.
In a separate bowl, beat the egg whites until foamy and then add them to the wet mixture.
Next, combine the wet mixture with the flour. Mix well. Your batter will be very thick.
In a skillet, use butter to coat your pan.
Drop spoons of the pancake mixture on to the hot skillet.
Cook on each side about 2 minutes so it is cooked all the way through because the batter is very dense.
To serve, top with a pat of butter and sprinkle generously with powdered sugar.
