Carolyn’s Holiday Lizzies
These Holiday Lizzies are featured in my Grandmother’s handwritten cookbook!
When I first asked my father about them, he said “she made so much stuff I can’t keep up with it all, but I do know – these were good!”
Since its the “holiday season” I wanted to make them for my daughter. We do have our fair share of desserts, since I’m “always fixin something good,” but these are special. I paired them with some Old Fashioned Eggnog, another one of the recipes in my grandmother’s cookbook.
I was totally nervous (skeptical) making these BUT since they turned out so good, I wanted to share the recipe with you all in hopes that you will enjoy them too. I got all the ingredients at Giant in the produce section near the baskets of nuts. I will say some of these ingredients are only seasonal at regular grocery stores. I’m certain you can find them year round elsewhere.
You will need the following ingredients:
– ½ cup sugar
– 1/3 cup butter
– 1 ½ teaspoons of baking soda
– 1 ½ tablespoons of milk
– 2 eggs, beaten
– 1 ½ cups of flour
– 1 4oz container of candied pineapple, chopped
– 1 4oz container of candied cherries, chopped
– 8 dates, pitted and chopped
– 1 cup pecans, chopped
Directions (typed exactly as my grandmother wrote them):
Cream together sugar, butter and eggs.
Sift flour and [baking] soda together and add to egg mixture.
Pour in the milk and then add the rest of the ingredients and mix well.
Drop by the spoonful onto a greased cookie sheet.
I hope you enjoy my grandmothers recipe. If you are on Instagram, tag me @ImSimplyD & let me know how yours comes out.
