Shrimp “Pasta” Salad
Who doesn’t love a good pasta salad, especially at a barbeque!
Well my daughter is a HUGE pasta lover, but I try to be conscious of how much she actually takes in. She will often ask me to make pasta salad, no matter what time of the year it is. Although we are pretty petite in size, I know health wise, I still have to be cognizant of what she eats.
I came up with this “pasta” salad recipe because her constant nudges for pasta in any form, are at least once a week!
I know you’re like “ok get to the point and tell me why you keep putting quotes around the word pasta?” Well because there is NO pasta in this recipe!
This is a pasta-less pasta salad!
Now before you think I’m totally insane, I’ll have you know there are some pretty swell vegetarians and even some fully raw vegans who would just adore this recipe, minus the shrimp! LOL I personally LOVE shrimp as a protein in my salads and “light fare” dishes. You will see shrimp as a recurring theme throughout my meals and recipes.
Ok, so let’s get to this AMAZING Shrimp “Pasta” Salad!
In order to make your “noodles” you will need a spiral slicer. I purchased mine from Amazon here.
You will need the following ingredients:
– 2 Large Zucchinis or 3 small zucchinis
– 12 – 18 large tiger shrimp, fresh – steamed, cut and chilled
– 1 ½ cup of cherry tomatoes, cut into quarters
– 1 small cucumber, cubed
– ½ cup of Vidalia Onion salad dressing (if this is too sweet for you, use Italian)
– 1 yellow or orange bell pepper, cubed
– 1 cup chopped broccoli, raw (optional) – I didn’t use any for this recipe
– 1 tablespoon fresh dill, chopped
– fresh black pepper to taste
First you want to wash all your produce. Make sure everything is cleaned and stickers are removed.
Next you want to dice/cube your bell pepper and cucumber. Then you want to quarter your tomatoes. Set both aside.
While you are cutting your veggies, unless you purchased pre-steamed shrimp, you can go ahead and steam your shrimp. Let them cool while you are dicing and then cut them into bite-sized chunks.
(I did season my shrimp with a 1/2 teaspoon of old bay)
Now the fun begins. In order to spiral slice your zucchini to make your noodles, cut both ends of the zucchini so its flat. Place in the spiral slicer and crank.
You will end up with a large amount of fresh, amazing, fully raw zucchini noodles! Wohoo! **Since they are long, typically a continuous piece, you can cut them down to shorter lengths or you might end up with a 3ft zucchini noodle on your plate!
Next you want to chop your fresh dill.
Now, in a large bowl, you want to combine the noodles, dill, cut veggies, shrimp and salad dressing as well as your pepper. You want to gently toss to incorporate it all. Let this chill in the refrigerator for at least 1 hour before you serve.
Super simple, healthy and overall yummy!
